Flavours and Flavour Compounds
Covi-ox and Controx antioxidants protect flavours and oils from oxidization.
Hydrophilic emulsifiers, like the products of our Lametop, Lamesorb- and Monomuls ranges, support technological processes, such as spray-drying and incorporation into the water phase.
Carriers, such as Delios (MCT oils) fix and standardize flavours in various applications.
2. Our Products
Antioxidants
Cognis is one of the major producers of natural tocopherols worldwide. Natural mixed tocopherols are sold under the brand name Covi-ox for many food applications.
In order to achieve higher stabilization in vegetable oils, Cognis has developed several synergistic antioxidant compounds. Such compounds, sold under the Controx brand are based on mixed tocopherols and contain ascorbyl palmitate and synergistic emulsifiers.
Emulsifiers
Cognis offers a broad variety of mono- and diglycerides within our ranges. These emulsifiers can be distinguished by
- the content of Monoglycerides
- the source of fat base
The monoglyceride content varies between 45-90%. The fat base is responsible for the physical appearance of mono- and diglycerides.
The polysorbates, out of our Lamesorb range, are used in the flavour industry as solubilizers. These are emulsifiers with high HLB-values and they therefore are used as oil in water emulsifiers (solubilizers) for hydrophobic substances, such as colorants (carotene), vitamins and fat-soluble flavours and fragrances.
Lametop types (E 472e) as well as Lamegin ZE types (E 472c), are generally permitted food additives. They are suitable alternatives for the above-mentioned Polysorbates, which sometimes have restrictions in food applications. In contrast Lamegin type emulsifiers can be used in many kind of foodstuffs at a “quantum satis“ level.
Carriers
The products out of the Delios Range are so called MCT-oils (Medium Chain Triglycerides). They offer some unique properties for dilution, standardizing and better handling of flavours. Due to their excellent antioxidative stability, low viscosity and good miscibility, Delios products are excellent solvents or carriers.
